Ingredients
- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup confectioners’ sugar (for coating)
Instructions
- In a mixing bowl, whisk together cocoa powder, sugar, oil, vanilla extract, and eggs until smooth.
- In a separate bowl, combine flour, baking powder, and salt. Gradually stir the dry ingredients into the wet mixture until combined.
- Cover dough with plastic wrap and refrigerate for at least 3 hours or overnight.
- Preheat oven to 350°F. Line baking sheets with parchment paper.
- Scoop dough with a mini ice cream scoop or spoon, then roll into balls. Generously coat each ball in confectioners’ sugar.
- Place balls on the prepared baking sheet, spaced 2 inches apart. Bake for 10–12 minutes. Cookies will be soft but will harden as they cool.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
